Organic roasted vegetables are a delicious and healthy way to enjoy your produce. Roasting brings out the natural sweetness of vegetables, making them even more flavorful. Plus, roasting requires very little added fat or sugar, so you can keep the health benefits of eating organically without sacrificing taste.

Roasted organic vegetables can be a great way to add flavor and nutrition to your plate. Here are some specific recipes you can use to get started cooking with roasted organic vegetables:

  1. Roasted Carrots & Parsnips – Slice carrots and parsnips into medium-sized pieces, then drizzle them with olive oil, salt and pepper before roasting in the oven at 425°F for about 25 minutes or until tender.
  1. Broccoli & Brussels Sprouts – Cut broccoli florets into small pieces and cut brussels sprouts into halves if they’re small or quarters if they’re big. Place on baking sheet, drizzled with extra virgin olive oil, salt and pepper before roasting in the oven at 400°F for 10-15 minutes or until browned.
  1. Roasted Sweet Potato Fries – Peel sweet potatoes then slice them lengthwise into thin strips (about ¼ inch thick). Toss fries in sea salt, black pepper, garlic powder, onion powder, paprika and extra virgin olive oil before baking in the oven at 425°F for about 20 minutes until crispy on the outside yet soft on inside.
  1. Balsamic Glazed Eggplant – Dice an eggplant into 1-inch cubes after removing skin from it first; then toss it with balsamic vinegar as well as garlic cloves minced on top along with oregano leaves; spread mixture onto a parchment paper covered cookie sheet before roasting in the oven at 375°F for up to 30 minutes or until eggplant is lightly charred but tender inside when pierced with a fork easily.
  1. Spicy Roasted Sweet Potatoes – This is an exciting and unique spin on traditional sweet potatoes! They get their flavor from cumin, chili powder, coriander, oregano and smoked paprika. Plus, they’re topped with feta cheese for a salty contrast.
  1. Rosemary Parmesan Green Beans – Green beans take on a totally different flavor when roasted with rosemary and parmesan cheese! The combination creates an intense flavor that’s perfect as a side dish or as part of an entrée.
  1. Cilantro Lime Zucchini – Who knew zucchini could be so flavorful when seasoned with fresh lime juice and cilantro? It’s perfect in tacos or served alongside fish or chicken dishes. You won’t believe how much this simple recipe will add to your meal!
